Broth & Bitters introduces Miami to an entirely new kind of cocktail experience — an intimate, high‑end omakase bar where bartending becomes performance, storytelling, and art. With only a handful of seats, each guest is guided through a curated progression of cocktails crafted with precision, imagination, and a reverence for flavor. Every pour is intentional, every garnish purposeful, and every moment shaped by the bartender’s mastery of technique and balance.

A little place with a whole lot of heart

In true omakase fashion, guests surrender to the journey. Each cocktail is paired with a single, exquisite bite — a harmony of textures and tastes designed to elevate the drink it accompanies. The pairing is presented personally, described in detail, and served as a dialogue between chef, bartender, and guest. It’s immersive, slow, and deeply sensory: the crack of ice, the aroma of fresh herbs, the warmth of a just‑finished reduction, the surprise of a flavor you didn’t expect but instantly love.

Broth & Bitters is intentionally small, intentionally quiet, and intentionally unlike anything else in Miami. Here, the night unfolds one pairing at a time, with the creators themselves guiding you through the inspiration behind each element. Meet The Bartender

Born and raised in Miami, Erika Holtz is a Cuban American bartender and beverage innovator whose work blends culinary technique, botanical ingredients and scientific precision into immersive drinking experiences. After discovering her passion for hospitality early in her career, she refined her craft under acclaimed Miami bartender Jesse Royer, whose mentorship helped shape her approach to flavor, technique and guest experience. Holtz has since helped shape beverage programs at some of Miami’s most celebrated bars and restaurants, earning a reputation for inventive cocktails rooted in seasonality and creativity.

Drawing on her lifelong interests in chemistry, botany and wellness, Holtz founded Broth & Bitters, an intimate 12-seat beverage-focused omakase that invites guests to surrender to a one-of-a-kind sensory journey. Each seasonal menu features miniature-format cocktails, showcasing fresh ingredients sourced from local farmers and producers.

Designed as both a tasting room and storytelling experience, Broth & Bitters reflects Holtz’s belief that cocktails can be as expressive and memorable as any chef’s tasting menu. Served in a warm, intimate setting with vintage glassware, vinyl records and ever-changing creations, each visit is crafted to surprise the palate, spark conversation and leave guests with a lasting memory. And, yes, she does make her own broth and bitters.
